Another idea for breakfast or for your lunchbox. This is very easy to prepare but looks just like those you get from a cafe on Ponsonby Road.
Using my Basic Oat Bran Galette recipe to me a crepe. Instead of cooking it in a pancake pan, using a normal size non-stick pan. Tilt and swirl the pan so the galette mixture covered the pan evenly. This will give you a nice thin crepe. Cook until brown on both sides. Remove from the pan. Put the fillings and roll the crepe into a cylinder shade. You can serve whole or cut in the middle to make it into 2 small rolls.
The fillings are endless. You can use anything Dukan approved. Today, I use 98% Fat Free Ham with some of my homegrown capsicum cut into thin strips. Served with a bit of Dijon mustard & freshly cracked black pepper. Leave out the capsicum and add more meat for your PP days.
